the ultimate zucchini lasagna

The Ultimate Zucchini Lasagna

Recipe from the kitchen of Dorothy Perry. Perfected by Becky Perry (5/15/20).

Ingredients:

1 lb ground beef

1 15oz can tomato sauce

1/2 tsp garlic salt

1 tsp basil

1 tsp oregano

1 12oz carton cottage cheese

1/2 c Parmesan cheese

1 egg

1 1/2 lb zucchini (cut lengthwise)

2 Tbsp flour

1 pkg mozzarella or jack cheese

Directions:

Preheat oven to 350 degrees. Brown meat and drain. Add sauce, garlic salt, basil and oregano. Simmer for 20 minutes.

Spray 9×13 Pyrex pan. Mix cottage cheese, egg and 1/4 cup Parmesan cheese together. Begin first layer: zucchini, flour (1 tbsp), cottage cheese mixture, meat sauce, mozzarella cheese. Repeat. Sprinkle 1/4 cup of Parmesan cheese on top.

Bake uncovered 45-55 minutes. Let stand 20 minutes before cutting into squares and serving.
